Omnom s’mores Ice Cream

Omnom Chocolate Fudge Sauce

+ 2/3 cup simple syrup

+ ½ cup cream

+ 1/6 tsp salt

+ 1 bar Omnom Tanzania 70%, melted

Add the simple syrup and cream to a pot and bring to a boil. Add the salt and melted chocolate; stir to combine. You can use immediately or cool down for later use.

Graham Crackers

+ 1 cup brown sugar

+ 7/8 cup butter, room temperature

+ 1 cup steel cut oats

+ ¾ cup flour

+ 1/3 tsp salt

Heat oven to 350 F.  Mix sugar and butter together in a mixing bowl until well combined. Add oats and flour; combine. Add salt. Crumble dough over a lined baking sheet. Bake for 8-12 minutes or until golden brown. Once cooled, break into pieces.

Vanilla Meringue

+ 1 ½ cup sugar

+ 1/3 cup water

+ 4 large egg whites

+ 1 tsp vanilla extract

Boil sugar and water until it reaches 250 F. Whip egg whites and vanilla until frothy. Slowly add the warm sugar syrup. Keep whipping for another 10 minutes at high speed or until cool to the touch.

To assemble

+ ½ tsp Saltverk Birch Smoked Sea Salt

+ 4 cups vanilla ice cream

Place graham crackers at the bottom of your serving bowl. Layer with fudge sauce and ice cream. Pipe the meringue on top, sprinkle with smoked sea salt. Using a blowtorch, brown the meringue to your liking.

Serve immediately and enjoy!
